Vanilla Pudding Muddy Buddies



Do I have a treat for you today :)

Not only have I made Muddy Buddies... I have made super yummy fantastic Muddy Buddies with a few super special secret ingredients!   

Who got creative in the kitchen?  I got creative in the kitchen!  

I did do my homework though, and no matter what kind of Muddy Buddy's I tried to look up I kept coming across The Recipe Critic's "Skinny Muddy Buddies" recipe.  I ended up improvising and tweaking her original recipe a little.  I cut out half of the butter and added some coconut oil to my muddy buddies mixture and they turned out so fabulous! 

Don't you just LOVE muddy buddies! 

Vanilla Pudding Muddy Buddies Ingredients
2 cups Wheat Chex cereal (or you could use rice chex too if you already have them on hand)
1 tablespoon coconut oil 
1 tablespoon butter
2 tablespoons creamy peanut butter (I used  Wowbutter to make Peanut Free Muddy Buddies for my daughter)
1 package sugar free instant vanilla pudding mix
1/2 cup semi-sweet chocolate chips
2 tablespoons powered sugar

Directions
Melt the coconut oil, butter, creamy peanut butter & chocolate chips in a small non-stick pan over low heat.  Watch it carefully so you don't overcook and burn the mixture. 

After the mixture has melted pour it over the Chex Mix cereal in a medium mixing bowl.  Immediately spread the chocolate coated cereal onto a parchment lined cookie sheet and allow to cool for about 30 minutes.  

After the mixure has hardened place it in a ziplock bag.  Add the instant vanilla pudding mix along with 2 tablespoons of powered sugar and gently shake bag to coat all pieces.

I love Muddy Buddies! I've made several versions over the years, but I haven't tried using instant pudding (I don't think?!). I like that the sugar and butter is reduced. (I make mine with a peanut butter replacement as well...my 4 y/o is allergic to nuts)
